
aniya (coriander seeds), Tamarind, Garlic, Onions, Bitter guard, Oil
PREPARATION:
- Fry all the above ingredients without using oil in a pan ( other than bitter guard )
- Cool them and grind it into fine paste
- Peel just one outer layer of bitter guard
- Cut them into small tubes
- Take out the stuff in it and make them hollow
- Place water on stove top in abowl
- Add jaggery, curd, turmeric, tamarind , salt and hollow bitter guard tubes and boil for 10 minutes
- This decreases the bitterness in the vegetable
- Drain water completely and keep aside the bitter guard tubes
- Deep fry them in oil
- Stuff the prepared mix into the bitter guards
- Garnish with coriander
- Goes well with hot hot cooked rice
- Bitter less stuffed bitter guard is ready now

If you want to avoid deep frying in oil, alternately you can follow this process:
Just after boiling the bitter guard, stuff the mix without deep frying the bitter guard , place them in pan or pressure cooker and cook for 3 whistles and serve
