INGREDIENTS: Dry Coconut, Gasagasalu (poppy seeds), Salt, Red chillies, Dh
aniya (coriander seeds), Tamarind, Garlic, Onions, Bitter guard, Oil





PREPARATION:

  • Fry all the above ingredients without using oil in a pan ( other than bitter guard )

  • Cool them and grind it into fine paste

  • Peel just one outer layer of bitter guard

  • Cut them into small tubes

  • Take out the stuff in it and make them hollow

  • Place water on stove top in abowl

  • Add jaggery, curd, turmeric, tamarind , salt and hollow bitter guard tubes and boil for 10 minutes

  • This decreases the bitterness in the vegetable

  • Drain water completely and keep aside the bitter guard tubes

  • Deep fry them in oil

  • Stuff the prepared mix into the bitter guards

  • Garnish with coriander

  • Goes well with hot hot cooked rice

  • Bitter less stuffed bitter guard is ready now

If you want to avoid deep frying in oil, alternately you can follow this process:

Just after boiling the bitter guard, stuff the mix without deep frying the bitter guard , place them in pan or pressure cooker and cook for 3 whistles and serve
