INGREDIENTS: Oil, Avalu (mustard seeds), Jeera (cumin seeds), Curry leaves, Coriander, Salt, Red chilly powder, Jeera powder, Hing (inguva), Alu, Brinjal, Tomato



PREPARATION:

  • Cut alu, brinjal and tomato into long finger like pieces

  • Place frying pan on flame, heat 2 spoons of oil

  • Add avalu, jeera and fry for awhile

  • Add curry leaves, pinch of hing, t spn of  jeera powder and cook

  • Add cut alu pieces, sprinkle little water and cook by closing the lid for 5 minutes

  • Add cut brinjal and again close the lid till alu and brinjal are cookes soft

  • Add salt, tomato, red chilly powder and mix well

  • Dish out and Garnish with coriander

  • Serves good with chapathis, rice..
