INGREDIENTS: Oil, Avalu (mustard seeds), Jeera (cumin seeds), Urad dal (vudhipappu), Bengal gram (senagaballu), Curry leaves, Coriander, Green chillies, Turmeric powder (pasupu), Salt, Onions, Potatoes, Carrot, Godhamapindi (Atta, Wheat flour)
PREPARATION:
- Mix wheat flour using pinch of salt and hot water like chapathis dough softly T
- To the dough add 1-2 full spatula of oil (15 spoons of oil) and leave it aside
- Parota dough is ready to us
- For stuffing,
- Boil potatoes, mash them till soft and keep
- Take kadai, heat 3-4 spoons of oil, add cumin seeds, mustard seeds, urad dal, bengal gram, curry leaves and wait till they splitter
- Now add chopped onions, grated carrot, mashed potato and fry well
- Give seasoning by adding salt and green chilly paste
- Add some coriander for flavour and mix all the ingredients till cooked
- Now make small balls for stuffing in parotas
- Take an fire free cover, apply oil to it, place some parota dough on it and place alu roll in it
- Make it as an ball by closing the stuff in dough
- Spread the ball with your hand like parotas
- Place that on frying pan
- Slowly take out the cover
- Roast it using little oil
- Alu parota is ready to serve now
- Serves good with onion raita or tomato ketchup...
