INGREDIENTS: Alu, Menthikura (Fenu greek leaves), Oil, Asafortida (inguva), Onion, Ginger garlic paste, Jeera powder (cumin seeds / jilakara), Red chilly powder, Dhaniya powder (coriander powder), Salt, Garam masala,
PREPARATION:
- Soak fenu greek leaves in water for 10 minutes by adding table spoon of sugar and salt
- Now place frying pan on flame, heat 2 spoons of oil
- Add t spoon of jeera powder, asafoetida, chopped onions, ginger garlic paste and fry
- Now add red chilly powder, dhaniya powder, salt and mix well
- Then add chopped methi leaves and cook till soft or 5 minutes
- Now add peeled, boiled, mashed alu into it and mix well
- Saute it for few minutes again by adding pinch of garam masala at last
- Dish out and serve
- Tastes good with rice, chapathis..
- Including yogurt (curd), and some pickle make your dinner more delicious
