ONE AMONG THE HEALTHY FOOD FOR DIABETIC PATIENTS IS BITTER GUARD, TAKING RAW BITTER GUARD JUICE EARLY IN THE MORNING CONTROLS LEVELS OF SUGAR IN THE BODY AND GOOD FOR DIABETIC ESPECIALLY


INGREDIENTS: Bitter guard (kakarakaya), Tamarind, Salt, Curd, Turmeric, Jaggery (bellam) , Red chillies, Garlic, Dry Coconut


PREPARATION:
  • Peel the outer layer of bitter guard (dnot peel completely only just the outer lumps part)
  • Now cut them into thin slices
  • Place bowl on flame, heat water
  • Add bitter guard slices, turmeric, jaggery, tamarind paste, curd and boil till bitter guard becomes soft (this is just to remove the bitterness of the vegetable)
  • Drain in a colander (under tap) for 5 minutes, to cool, squeeze water by pressing them
  • Place frying pan on flame, heat 4 table spoons of oil
  • Add drained bitter guard and fry till golden brown or brown fully (takes little time)
  • Grind coconut, salt, tamarind, garlic, red chillies, jaggery (optional) in a mixy jar 
  • Add this to the bitter guard and saute for few minutes
  • Dish out & Serve
  • Tastes good with rice, can be taken as snack, side dish....
Addition of onion also tastes good for this recepie,  Interested people can deep fry in oil and give the same grinded powder and mix
